Steering play sounds normal to good. Some tech inspections before an organized event, such as Northwest Challenge, allow for 4" of play before the wheels move. I have about 2 on my series truck.
Clutch, I think the pedal play can be adjusted -- right up at the pedal housing IIRC, but you want to make sure that there is definitely some portion of free pedal travel (held back only by the spring) before engaging the clutch master cylinder shaft, otherwise you have the equivalent of riding the clutch at all times, which will make quick work of your throwout bearing.

However, good steering, like on any other road worthy motor vehicle would have little to no play in the steering - a Land Rover is no exception. If you have play then it is worth a look to determine where it is, don't just accept it. Much of it can likely be eliminated with proper maintenance and/or renewal of worn parts, sometimes even just the snugging up of some loose nuts.
